Which win chance is best?

None of them, mathematically. Expected value is identical across the slider. Higher win chance means smaller, more frequent wins; lower means the opposite.

Does Martingale work on Dice?

No. It produces many small wins and occasional catastrophic losses, and table limits stop the doubling sequence before it can recover. Over time it loses at the same 1% rate, just more violently.

Can I verify a roll?

Yes. Every roll comes from your client seed, the server seed and a nonce, and can be checked after the fact.
